Does this restaurant offer and Omakase menu. What kind of tuna do they use? Frozen vs. fresh also big eye or bluefin vs Yellowfin?

Tuna MUST be frozen before it can be served in a restaurant raw it's the law. The freezing kills any parasites in the fish

Do they do take out and how fast do they make their food?
